Ostrich steaks recipe

From ostrich steaks, ostrich biltong to ostrich goulash, there are various ways to cook ostrich! It's up to you! You could actually try them all as this is a very healthy meat to eat because it has very little fat. South Africa is the country of ostriches and so the country to eat the best ostrich dish! The first time, I ate ostrich was with a pepper sauce which was nice. However, after all these years trying different dish, my favourite recipe still remains ostrich fillet or steak with red wine sauce.

(serve 4)

Ingredients

4 steaks

½ cup fresh orange juice

3 cups red wine

2 teaspoons Maizena

A handful of pitted black olive

Chopped parsley

Salt and pepper

Olive oil

Method

Fry the steaks in a non sticky pan, turn them frequently but carefully! Never use a fork to do so! The steaks would lose their juice. When cooked, remove. Add salt and pepper

Mix orange juice, olive and wine. Heat this sauce and when it starts boiling add the maizena. Keep mixing until the sauce thickens.

Pour the sauce over the steaks, sprinkle parsley and serve with roasted potatoes or mashed potatoes with a pinch of dark cacao powder.

Mmmmhhh...I'm running to the kitchen to make it again!!! As other red meats, it's fine to freeze it so you can always have a piece when you need it! ;-)

Bon appétit!
