Veloute of zucchinis with a touch of cardamone and delicious chicken skewers (serve 2)


Ingredients

Veloute:

2 zucchinis

250 ml soya milk

3 cardamome pods

Skewers:

300g chicken breasts

2 table spoon of honey

1 table spoon of soya sauce

Method

Peel and cut zucchinis in pieces. Put them in a pot with the soya milk and cardamone pods.

Cook for 15 minutes, mix and reserve for the heat.

Cut the chicken in cubes.

In a large frying pan, mix the honey and the soya sauce, then add the chicken.

Cook on medium heat for few minutes and then on high heat for couple of minutes. Turn them over from time to time.

Cooking is finished when there is almost no more sauce.

Spit the chicken pieces 4 skewers

Add salt and pepper

Split the veloute in 2 bowls and add the chicken skewers on top of them.




Tuna salad marinated in citrus juice (serve 4)


Ingredients

300g fresh tuna

4 Tanjerines

3 Oranges

2 Grapefruits

1/2 Liter of orange juice

Castor sugar

Juice of 3 limes

Juice of 3 lemons

2 table spoons of Dijon mustard

4 table spoons of white wine vinegar

1/3 cup of olive oil

1 chopped fennel bulb

1 yellow sweet pepper cut in small cubes

3 tomatoes cut in small cubes

1 finely chopped red onion

Finely chopped garlic (for the taste)

Chopped mint

Salt and pepper

Method

Cut the tuna in cubes and put it in a bowl.

Add the lime and lemon juice.

Cover and leave it marinate in the fridge for 3 hours. Mix 3 times in between.

Mix the mustard and the vinegar together. Add the oil while mixing with the whip. Season and keep it aside.

Take away the tuna from the citrus juice. Slightly press it in order to remove the juice surplus.

Add vegetables,fruits and garlic to tuna and season.

Add vinaigrette, mint and mix well.
